The manufacturing secrets of this Norman brandy have been passed down from generation to generation since the 16th century. Made from more than 200 varieties of apples but also pears, harvested by hand then pressed and fermented, Calvados is in fact distilled from cider. There are several distillation processes according to the AOC, but AOC Calvados is produced exclusively by simple distillation, in a column still which produces a 72% eau de vie.

This is then aged for at least two years in oak barrels, developing over time a beautiful amber colour and complex aromas of caramelised apple and exotic honeyed flavors. With a silky texture and good acidity, Calvados can be enjoyed chilled or as an accompaniment to chocolate or fruit desserts.
